Some scotch whiskies are world renowned for their peated characteristics, ranging from lightly peated to essentially an entire mouthful of smoke. Peat, a mixture of partially decomposed vegetation, fuels the fire in a kiln used to dry malted barley. That barley is used to make the scotch and results in a whisky carrying smoky flavor notes that can sometimes be immediately attributed to specific regions in Scotland based on the peat's intensity.
